2012 RIESLING WINEMAKER'S NOTES:
Eyes: The wine is wonderfully bright and translucent in the glass, with tones of green, gold, and blue.
Nose: Right from the first note, our Riesling jumps out with wonderful sweet, floral and exotic fruit aromas that I think are best described as candied rose petals dipped in
Cointreau and dusted with powdered sugar. In other words, irresistible.
Mouth: On the palate, the sweet floral and tangerine flavors continue but the fruit characters are more complex. Lychee, mango, lemoncello, with a hint of allspice. The
wine is balanced between acid and sweetness, with full flavors that make this wine a big crowd pleaser.
Pairings: I recommend chilling the wine before serving, then enjoying with Thai food, shelled fish, and flavors that are more spicy and salty.
Bread: The 2012 Riesling was fermented and aged in stainless steel and was not affected by any oak treatments. The fruit was pressed very gently and fermented at low
temperatures to preserve the bright, clean feel.
Butter: No butter here. The fruit was picked early in the cool Monterey morning which kept the floral characters intact. We really wanted to showcase the beautiful aromatics and keep that balanced acidity bright and crisp. This wine did not undergo malolactic fermentation.

The type of oak, origin, producer, level of toast, time on oak, and racking all play a vital role in developing bread-like flavors and texture of the wine. Butter characters come from malolactic fermentation. The conversion of malic acid to lactic acid produces rich, buttery flavors and changes the texture of the wine to be more creamy and soft. These factors work together to best compliment the complexity of fruit and expression of terroir produced in the vineyard.
